Healthy Breakfast Muffins
If you're a fan of eating something quick but healthy in the morning, these muffins are perfect for you!
For me, I can't always eat something big and/or heavy in the morning as my stomach doesn't like it, so these are the perfect breakfast item for me. For those of you interested in the nutritional side of things, these are high in protein, high in vitamins & minerals (thanks to the veggies) and they taste amazing! The best part is that you can always change up what ingredients you add, but these are normally my staples (and red peppers, however I had none when I made these!);
• Broccoli
• Cherry tomatoes
• Cheese
Ingredients (makes 12)
• 6 eggs
• 1/2 cup of milk (this can also be substituted for soya milk)
• Handful of cherry tomatoes, chopped into 1/4's
• Handful of broccoli florets, chopped into small pieces
• 50g cheese, grated
• Pinch of salt & pepper
Method
1. Preheat the oven to 180*C/350*F
2. Grease (or use tin foil!) a 12 cupcake baking tray. I used the Frylight Coconut Oil
3. In a glass jug, whisk the 6 eggs & milk together. Once whisked, add in all of the remaining ingredients into the mixture and mix together
4. Pour the mixture into each of the 12 sections evenly
5. Bake for approximately 20 mins, or until the tops of the muffins are firm
6. Once cooked, remove from the oven and leave to stand for a few minutes. Once cool, remove from cupcake tray and serve!
