Salmon & Steamed Veg recipe
This is by FAR one of my absolute favourite dishes I've ever learnt how to make!!! If you're a big salmon fan, then this dish is ABSOLUTELY for you! I like to call it a one-pot wonder, as I use a steamer for this entire dish. And we all know salmon is good for us right!? Packed with TONNES of omega-3 and vitamins & minerals - yum!
PS. Nutrition tip - steaming is one of the best ways of cooking veg! If you boil veg, the nutrients end up floating around in the boiling water, which you normally throw away. So if you boil your veg, you're actually getting less nutrients! Steaming is super easy too. If you don't have a steamer, you can just use a large pan, colander/sieve and the pan lid!
Ingredients (makes 1 portion)
• Tin foil
• 1 salmon fillet, fresh or frozen (if frozen, defrost it fully first)
• Salt & pepper seasoning (totally optional, but I LOVE it on mine)
• Drop of olive oil
• 1 pack of green beans
• Handful of cherry tomatoes
• Sliced courgette
• Handful of a nuts/seeds mix (my favourite contains pumpkin seeds!)
• Sliced lemon
• Lemon juice
• 1x boil in the bag rice
• Salt & pepper
Method
1. Use a 2 tiered steamer. Boil the kettle and pour the hot water into the bottom tier of the steamer. Add rice bag into the water.
2. Line the 2nd tier with ONE sheet of tin foil (it's important it's just one sheet - if you use more than one, the veg takes much longer to cook)
3. On top of the foil, place the salmon fillet and sprinkle salt & pepper seasoning on top
4. Add in a drop of olive oil, handful of nuts/seeds, a splash of lemon juice, lemon slices and veg
5. Place lid on top of the steamer and steam for approx 15/20mins, or until the salmon and veg are tender
6. Serve when ready!
The lemon juice and the nuts/seeds on the salmon just go so incredibly well together! Try it for yourself and see!
