Thai Green Curry recipe
Another recipe... Can you tell I'm a foodie!?
It can be difficult at university to eat healthily (or semi-healthily) on a budget! However, it is possible. It's all about buying the right amount of food (not just chucking anything into your Tesco basket) and making a weekly food list! That's coming in another post... Watch this space!
So... My mum visited me this weekend and one night I decided to cook for us, although nothing ever beats Mum's cooking right!? I was flicking through Pinterest and a thai green curry caught my eye. I'd bought the paste a while back in Lidl, and I had totally forgotten I'd bought it! Until I saw this Pinterest post. My oh my, the picture looked phenomenal. I was legit dreaming of thai green curry all day!
Ingredients (makes approx. 4 portions)
• 2x boil in the bag rice, Tesco
• 2 chicken breasts, chopped into bite-size pieces
• 3 tbsp thai green curry paste
• 1 can coconut milk, light
• 1/2 cup of water
• 1 pack of mange tout
• 2 chillies, red & green
• 1 red pepper, chopped into small pieces
• 1 garlic clove
• Salt & pepper
• Drop of oil
Method
1. Heat a large pan and a drop of oil on the hob. Boil some water in another small pan and add the 2 bags of rice
2. Chop the chicken into small, bite-sized pieces and add to the pan with the thai green curry paste, coconut milk and water. Bring this to the boil
3. Add in the chopped red pepper, chillies, mange tout, garlic and salt & pepper. Simmer for around 10/15 minutes.
4. Once rice and curry are cooked, serve together
It's such a super quick, simple and cheap meal! Plus it tastes delicious! You can also add in other ingredients you prefer, such as baby corn! AND, if you're a student you can make this and freeze the other 3 portions ready for another night - perfect!
